First Phase of Slow Food Project Completed by Culinary Arts Commission and Slow Food International

The “Slow Food in Saudi Arabia” project, whose aim is to promote the country’s rich culinary heritage and biodiversity, as well as the food producers and chefs who work to preserve it by serving local foods on their menus and promoting them in the markets, has just unveiled its preliminary findings, which were presented by the Culinary Arts Commission and Slow Food International.
The goal of the initiative is to preserve local biodiversity and emphasise the value of traditional goods.
The first 60 Saudi items, including dates, honey, spices, cereals, fruits, vegetables, meat, and dairy products that have been produced in the Kingdom for millennia, were carefully chosen for the “Ark of Taste” catalogue based on cultural considerations and their relevance in cooking. The “Ark of Taste” aspires to raise awareness about Saudi food, highlighting the importance of preserving the local food heritage.
In keeping with the Commission’s goal of uniting the Saudi culinary arts and transforming the Kingdom into a home for an exceptional gastronomic experience that highlights its hospitality and culture, both locally and globally, the commission and its partner Slow Food International celebrate the Kingdom’s rich culinary heritage.
The project also seeks to establish the Kingdom as a premier source of distinctive cuisine in the Arab world and the Middle East.
