Only For One Night: A World-Class Italian Six Hands Culinary Experience At Mare By Bussola

The Westin Dubai Mina Seyahi Beach Resort & Marina’s Mare by Bussola will be transformed into a Michelin-starred powerhouse of culinary pleasures for one night only, serving a six hand’s menu.

On Thursday, February 23, Michelin Green Starred Chef Stefano Pinciaroli, two-time Michelin Starred and Green Starred Chef Gianni Tarabini, and Mare by Bussola’s resident Chef Simone Montanaro will collaborate in a world-class setting. Diners are invited to enjoy an evening of delectable seafood cuisine from Chefs from various regions of Italy, plating up the heat of the kitchen with the flavor of the sea.

Chef Pinciaroli, who hails from the Tuscan hills, uses his culinary expertise to recreate traditional Italian dishes by drawing inspiration from the past and modernizing them. Stefano is honing his craft of modern culinary inventiveness for Mare by Bussola. With his homemade potato gnocchi with Palomos octopus and “Cacio e Pepe,” along with squid stuffed with “Pappa al Pomodoro” with basil pesto and crispy leeks, Stefano evokes feelings of family feasts. 

Chef Tarabini, on the other hand, motivates with his Northern creative cooking style, which earned him a sustainable Green Michelin Star at PS Ristorante through his “proximity” of food sources and “consistency” of efforts. With his presentation of modern dishes at Mare by Bussola, such as the prawn carpaccio with orange emulsion and fruit ensemble and a plate of red snapper with double cream reduction, caviar, and black truffle, guests can anticipate the same level of attention to detail and imaginative culinary flair.

With a live saxophonist providing entertainment, low-lit dimmed mood lighting, and olive trees and blue and white linen for that touch of oceanic tablescaping, Mare by Bussola, the new outdoor restaurant from the award-winning Bussola, sets the tone for a relaxed and ambient evening. Chef Simone Montanaro leads his team of dynamic chefs with his Milano cooking style.

Chef Montanaro, a rising culinary star who has lived in Italy, Singapore, the Maldives, and Dubai, is prepared to team up with Chefs Tarabini and Pinciaroli for this amazing, one-night-only gastronomic event. Bookings cost AED 395 for food-only reservations and AED 595 for those that include a beverage pairing. Dinnertime is 7:30 p.m.
